Chopped Kale and Spinach Salad

INGREDIENTS:

1 bunch organic kale, chopped
1 bunch organic spinach, chopped
1 lemon, juiced
1/4 cup extra virgin olive oil
1/3 cup organic currants
1/3 cup sliced almonds
1/3 cup Feta cheese
Drizzle of balsamic glaze to taste
Sea salt and black pepper to taste

PREPARATION:

Hand chop or shred in the food processor two large handfuls each of kale and spinach. Add currants, almonds, Feta cheese and toss dry. Whisk olive oil and juice of one lemon. Add lemon/ olive oil mixture, drizzle balsamic glaze, and toss again. Add salt and pepper to taste.
